Had-To-Share-It Recipe

The STAR of the meal yesterday was the Sweet Potato Casserole. It was so completely delicious that I couldn't keep the recipe to myself. I'm not kidding... it's like hot sweet potato candy - and you'll never make another version of sweet potatoes as long as you live.

Ingredients:
3 large sweet potatoes
1 c white sugar
2 eggs beaten
1/2 c milk
1/2 t salt
1/3 c butter, melted
1 t vanilla extract

For Topping:
1 c brown sugar
1/2 c flour
1/3 c butter, melted
1 c pecans, chopped

Boil sweet potatoes until fork tender, drain and mash. Mix sugar, eggs, milk, salt, butter and vanilla with the potatoes. If you've just boiled the potatoes, be sure to temper the eggs or they'll scramble! Mix well and pour into a greased 9x13 baking dish.

To prepare the topping, mix the brown sugar, flour, melted butter and pecans in a seperate bowl and crumble over the potato mixture. Bake in a 350 degree oven for 35-45 minutes. I'm not kidding - it'll change your life : )
