As long as you have some sort of canned beans, ou have an instant protein. Try bfast quesadillas too - just make scrambled eggs, then warm up some salsa in the microwave and add to the eggs & cheese burrito. Top with green onions or jalapenos. <br /><br />Do you have a crockpot? You can pretty much do anything in it. I learned from a woman at church that you can put a frozen ham or roast & potatoes in all day (I add stock or a bottle of beer). It defrosts (maybe not the way most people recommend, but whatever) then slow cooks to tenderness. You can use cheap cuts of meat (lamb shoulder, chuck roast, pork shoulder) and it will create leftovers for the week!
